Zion National Park can be a really challenging place to photograph. It's scale, topography, light characteristics and access can all make finding and capturing a good composition a lot of work. It's really hard to portray the scale of the canyon in one image except from a few specific viewpoints.
I found it helpful to reorient my mindset and look for beauty in the details. Look in places you'd otherwise walk past finding patterns, colors, textures and contrasting elements in the intimate landscapes. This is great practice for photographers as we train our eyes to see in photographic elements rather than reacting to pretty things like the average casual shooter tends to do. A bonus is that you're much more likely to come away with unique images.
